Stewed Tomatoes


Ingredients:
4 cups tomatoes
1 cup chopped onions
1 cup chopped Bell peppers
2½ teaspoons minced garlic
2½ teaspoons chopped fresh oregano
1½ teaspoon brown sugar
1¼ teaspoons olive oil


Quarter tomatoes.
Heat olive oil in a dutch oven or frying pan.
Add garlic and oregano, cook till garlic is tender and oregano is fragrant (about 2 min).
Add chopped onion and peppers and cook until tender (about 5 min).
Add tomatoes & sugar, simmer covered about 15 min and then uncovered for about 30 minutes or until desired consistency (you will need to cook longer Uncovered if tomatoes are watery).
