Shrimp Scampi with Pasta
Ingredients:
Enough pasta of choice for 2
¾ lb. medium or large shrimp
3 tbsp butter
4 tsp minced garlic
4 sprigs scallions, sliced thinly
2 tablespoons lemon juice
salt and pepper, to taste
Preparation:
Boil pasta per directions on box. While that's going on, rinse shrimp and set aside. Heat butter in large cast iron skillet over medium heat. Cook garlic 1 or 2 minutes or until softened but not browned. Add shrimp, scallions, and lemon juice; cook until shrimp are pink and firm, about 2 minutes on each side. Don't overcook. Turn off heat. Add cooked pasta (I used penne) over shrimp, cover and let heat for about 2 minutes, stirring occasionally. Add salt and pepper before serving. Garnish with lemon slices and parsley sprigs if desired.
