Wine-Onion-Rosemary Sauce for Fish
Found this on the net, modified it a little and it was pretty good.
Ingredients:
2 Tbsp Olive Oil
2 sprigs of Rosemary, cut up
½ Cup Red Wine
¼ Cup Lemon Juice
¼ Cup Scallions (or Onions), cut fairly small
Put all ingredients in a small frying pan. Slowly bring to a low boil, stirring occasionally. After about five minutes of low boiling, spoon over baked or grilled fish.
Tastes great, and it's awfully easy. Had it on grilled salmon steaks and it was a real hit.
