Quick & Easy Potato Salad
Potato salad is yet another great comfort food. We can do it, and do it well, right here.
Ingredients:
6-10 Small Red Potatoes
1 tsp. Garlic Salt
1 tsp. Celery Salt
½ tsp. Pepper
2 Tbsp. Balsamic Vinegar
3 Tbsp. Mayonaise
Cut the potatoes into approximately equal bite sized ¾" chunks, leaving on the skin. Put in sauce pan and cover with water. Add the Garlic Salt and bring to a boil and cook for about 10 minutes until the potatoes begin to get tender (not soft enough to mash though). Drain and let cool for about 10 minutes. With potatoes in a bowl, add the Vinegar, Mayo, Celery Salt and Pepper. Stir gently to coat all the potato pieces, and let cool to room temperature. Done. How bad was that?
