Slightly More Involved Potato Salad
This is just a bit more involved than the Quick & Easy Potato Salad, but it's still not so bad.
Ingredients:
6-10 Small Red Potatoes
3 slices yellow onion diced small
½ stalk celery diced small
1 tsp. Garlic Salt
1 tsp. Celery Salt
½ tsp. Pepper
2 Tbsp. Balsamic Vinegar
3 Tbsp. Mayonaise
Cut the potatoes into approximately equal bite sized ¾" chunks, leaving on the skin. Put in sauce pan and cover with water. Add the Garlic Salt and bring to a boil. Cook for about 10 minutes until the potatoes begin to get tender (not soft enough to mash though). A couple of minutes before they're done, put in the diced celery. Drain and let cool for about 10 minutes. With potatoes in a bowl, add the Diced Onion, Vinegar, Mayo, Celery Salt and Pepper. Stir gently to coat all the potato pieces, and let cool to room temperature. Done. Still not too bad.
