Buffalo Chicken Pieces
INGREDIENTS:
12-14 oz Boneless Skinless Chicken Breast cut into ½in cubes
¼ Cup Shredded Mozzarella Cheese
¼ Cup Diced Bell Pepper
¼ Cup Diced Onion
½ Cup Buffalo Wing Sauce
As Req'd Frank's Red Hot Sauce for additional sting
6 Tbsp Olive Oil
DIRECTIONS:
Saute the ½ the oil, onions, and peppers until onions are translucent
Add ½ the Mozzarella Cheese, and continue heating until cheese
is thouroughly melted. Remove from skillet and set aside.
Add Chicken pieces and cook until done. Maybe 10-12 minutes.
Let cool slightly and add wing sauce to chicken. Coat thouroughly. Mix the
onion & pepper mix with the chicken and top with remaining cheese.
Nice lunch or app for 4-5 race fans.
