Buffalo Chicken & Shrimp
INGREDIENTS:
12-14 oz Boneless Skinless Chicken Breast cut into 1/2 in cubes
15-20 Medium Shrimp, Peeled & deveined
1 Cup Shredded Mozzarella Cheese
½ Cup Diced Bell Pepper
½ Cup Diced Onion
¾ Cup Buffalo Wing Sauce
6 Tbsp Olive Oil
DIRECTIONS:
Saute the ½ the oil, onions, and peppers until onions are translucent
Add ½ the Mozzarella Cheese, and continue heating until cheese
is thouroughly melted. Remove from skillet and set aside. Heat
chicken with the other ½ of the oil until brown and cooked through.
Add shrimp and cook until pink and opaque. Maybe 3-4 minutes.
Let cool slightly and add wing sauce to chicken & shrimp. Coat thouroughly. Mix the
onion & pepper mix with the chicken and top with remaining cheese.
Serves 4-5 race fans.
